Roasted Garlic....35 unpeeled garlic cloves placed on baking sheet. Do not crowd. Bake in 400°f until outer leaves are dry and edges start to look brown. 12 to 15 minutes...cool naturally and peel.
Heat oil in large skillet over hi heat. Season chicken with 1 tablespoon Cajun Magic. Blend flour and 2teaspoon of CM in another container and dust chicken. brown chicken in oil 3-4 minutes each side then drain on paper towel. Lv ¼ c oil and add onions. Cook on medium and add 2teaspoon CM wand bay leaves. Add green peppers and cook 2 min.
Add tomatoes, increase heat to high and cook 1 min. Stir in tomato sauce and basil and cook about 1 min. Add roasted garlic and cook about 1 min. Stir in brown sugar and cook about 3 min. Add remaining PM. Cook about a min then stir in the stock. Return chicken pieces to skillet and bring to boil. Simmer, uncovered, about 25 minutes, stirring occasionally. Add salt and cook 1 min more. Serve over rice or pasta.
