Try this Chicken-Thyme-Penne Salad recipe, or contribute your own.
Suggest a better description1. Cook the penne pasta as directed on the package. Rinse with cold water, then drain.
2. In a very large (4 quart) bowl, mix together the pasta, chicken, grapes, celery & onion.
3. In a small bowl, mix together the oil & 1 tablespoon of the fresh thyme (or 1 teaspoon of the dried thyme). Pour this mixture over the chicken & pasta mixture, tossing to coat.
4. In a small bowl, mix together the mayonnaise, milk, honey, mustard, salt & the remaining thyme.
5. Cover the chicken & pasta mixture separate from the mayonnaise mixture & refrigerate for at least 4 hours, but no longer than 24 hours.
6. Up to 2 hours before serving, toss the chicken & pasta with the mayonnaise mixture. Cover & refrigerate until you are ready to serve the salad.
7. Just before serving, stir in the 3/4 cup of walnuts. Sprinkle with the remaining walnuts.
