Delicious version of chicken tikka masala inspired by Jamie Olivers 20 minute meals.
In a food processor put the ginger, garlic, 1 seeded chile and cilantro stalks and whiz. Spoon two tbsp of the puree into a large mixing bowl. Then add two of the three onions peeled and quartered into the food processor and puree.
Cut the chicken breasts into 1" x 1" chunks and add to the mixing owl with the 2 tbsp of puree. Add the turmeric, garam masala, 4 tbsp of yoghurt, 1 tbsp of curry paste and a pinch of salt and pepper.
Finely grate the zest of the lemon into the mixing bowl and squeeze the juice of the lemon into the bowl. Or use one tbsp of dried lemon zest and 3 tbsp of real lemon and stir everything together.
Put 3 tbsp butter to a large frying pan and melt on high heat. add the pureed contents of the food processor, the third onion peeled and sliced and the other 1 tbsp of curry paste. Cook until the have softened. When the mixture starts to darken add the canned tomatoes and coconut milk.
In another skillet place the marinated chicken chunks on medium to high heat and cook through.
Add the chicken to the puree mixture and stir through. Season further with salt and pepper. Heat through.
Put 2 1/2 cups dry rice and two tbsp of butter in a saucepan and cook stirring constantly. Add 5 cups of water and cook.
Apportion rice onto plates and spoon over chicken mixture. Dollop with remaining yoghurt, fresh cilantro leaves, and toasted slivered almonds. Serve.
