Great cold weather soup.
Boil chicken slowly to make broth. When complete, remove chicken and pick meat off the bones. Remove skin. Diced chicken meat up.
Add all the dry ingredients, diced tomatoes (including the juice), tomato paste, herbs, being careful to rinse them off and checking for stones before adding to the soup pot. Simmer soup over low heat until dry ingredients are thoroughly cooked. Add spinach and carrots and cook until the carrots are tender. Salt and pepper to taste.
Serve with grated Parmesan or Asiago cheese
