Brush both sides of chicken breasts with extra virgin olive oil then season both sides with garlic powder & pepper. Cook in an olive oil or nonstick sprayed skillet over medium-high heat until no longer pink in the center.
in a second med. pan after the chicken is started add extra virgin olive oil, garlic and shallots. Saute until shallots are slightly softened, about 1 minute, then add herb cheese, chicken broth, and lemon juice. Stir until creamy then add in fresh herbs. Spoon sauce over cooked chicken then serve.
Third pan, med high heat, splash on oil n soy sauce, fry the zucchini until soft.

If you want the sauce thicker add less broth or if you want it thinner add more.
Removing some strips of the skin of the zucchini using a peeler helps make it more tender.
