- Season the chicken breasts with paprika, salt, pepper & cayenne pepper
- Bake at 325 fro 30 minutes or until done.
- Meanwhile melt the butter in a saucepan over med heat.
- Add the flour.
- Add broth and whip the mixture well using a whisk.
- Add milk and whisk.
- Add salt & feta cheese bring to boil reduce heat and simmer 15 minutes, stirring frequently.
- Stir in the chopped spinach and red peppers
- Simmer another 15 minutes.
- (Optional) serve chicken over wild rice
- top with sauce
moraki 1 week agoWonderful recipe me and boyfriend loved, followed recipe but also added garlic and red onion to sauce. As a thick sauce lover I was shocked to say I had to also thin down the sauce like other reviewers. Would also add more feta and less spinach on next time! But lovely recipe and chicken was beautiful with or without sauce!
michele907 1 month agoI made this recipe tonight and loved it! I usually double the sauce in recipes but this one wasn't necessary. I had plenty of sauce plus some left over after the three of us ate. I didn't change anything in this recipe however, next time I will probably use a little less spinach. Also, my chicken breast was pretty thick and needed to be baked for an hour.

the_one_the_only_rabbit 1 year agoMy roommates and I enjoyed this very much! I did add more milk and mushrooms to the sauce. And instead of cayenne pepper, used Cajun seasoning! Still very delicious! Definitely making again!
Coralfish 1 year agoThis ones a keeper. I used fresh spinach from the garden, reduced the salt and amount of butter in the sauce, but pan fried chicken leg fillets. Was yum.

bjharms 1 year agoIt turned out great! Even my picky eater kids liked it. I did add extra chicken broth, approx. 1/2 cup more, to the sauce. I also added onions and garlic in the butter first before making the sauce. It was great over the rice. Thanks!
vcoops 1 year agoMy hubby and kids loved this sauce! Found it a little salty so will omit salt next time. Also added a bit of garlic powder. Increased red pepper and spinach also. Also needed to thin with some broth. Delicious!!!
ReganO80 1 year agoDelicious! I made a double batch of the sauce and will use again with some shrimp and noodles. This was excellent and didn't take much time to make.
