"Very good! I did add a little more broth to thin the sauce a little, and had to cook the chicken a little longer, but a very good recipe that earned excellent reviews from my family. We served it over wild rice. I will definitely be making it again!"
- Season the chicken breasts with paprika, salt, pepper & cayenne pepper
- Bake at 325 fro 30 minutes or until done.
- Meanwhile melt the butter in a saucepan over med heat.
- Add the flour.
- Add broth and whip the mixture well using a whisk.
- Add milk and whisk.
- Add salt & feta cheese bring to boil reduce heat and simmer 15 minutes, stirring frequently.
- Stir in the chopped spinach and red peppers
- Simmer another 15 minutes.
- (Optional) serve chicken over wild rice
- top with sauce

Fergcx1 3 months agoThis was very tasty. I sautéed a whole diced red bell pepper along w/shallots and mushrooms in the butter then added 1 cup broth & 1 cup milk & used 2TBSP cornstarch instead of the flour, used a whole 6oz pkg of feta, and used 3 cups chopped spinach( I omitted the salt) and pan fried the chicken. Sauce was just the right thickness and thickened quickly. Will continue to make. It is great w/rice or pasta.

feev784 7 months agoEasy gourmet type meal..... The sauce turned out great.... Not too heavy or too rich.... Did add extra broth like many other people.... Excellent presentation dinner that will really impress whoever comes over..... They will prob insist you share this recipe with them too....Lol
moraki 7 months agoWonderful recipe me and boyfriend loved, followed recipe but also added garlic and red onion to sauce. As a thick sauce lover I was shocked to say I had to also thin down the sauce like other reviewers. Would also add more feta and less spinach on next time! But lovely recipe and chicken was beautiful with or without sauce!
michele907 8 months agoI made this recipe tonight and loved it! I usually double the sauce in recipes but this one wasn't necessary. I had plenty of sauce plus some left over after the three of us ate. I didn't change anything in this recipe however, next time I will probably use a little less spinach. Also, my chicken breast was pretty thick and needed to be baked for an hour.

the_one_the_only_rabbit 2 years agoMy roommates and I enjoyed this very much! I did add more milk and mushrooms to the sauce. And instead of cayenne pepper, used Cajun seasoning! Still very delicious! Definitely making again!
Coralfish 2 years agoThis ones a keeper. I used fresh spinach from the garden, reduced the salt and amount of butter in the sauce, but pan fried chicken leg fillets. Was yum.
