Chickpea and Feta Salad (4)

Serve this Mediterranean salad on its own or with greens. Make it ahead so it has plenty of time to marinaate.


2 cups chickpeas; canned, rinsed & drained
2 cloves Garlic; finely minced
2 tablespoons Scallions; thinly sliced
1/2 Red bell pepper; diced
2 tablespoons Fresh parsley; finely minced
9 Black olives; pitted & chopped
1/2 cup Feta cheese; crumbled
1 tablespoon Extra virgin olive oil
3 tablespoons Fresh lemon juice
1/8 teaspoon Black pepper
1 teaspoon Lemon zest; for garnish

Original recipe makes 6 Servings



In a medium bowl, combine chickpeas, garlic, scallions, red pepper, parsley, olives, and feta cheese, toss to combine.

In a small bowl, whisk together oil and lemon juice, pour over chickpea mixture and season to taste with black pepper. Garnish with lemon zest, serve.
