6 Passion fruits; scooped
1 Pineapple; peeled; diced and Core removed
3 c Light rum
25 Peppercorns
2 Papayas; peeled and diced
3 Vanilla beans
2 Green apples; peeled, diced
10 Allspice berries
2 Mangos; peeled and diced
4 c Orange juice
8 Cloves
Seedless grapes; bananas or Fresh fruits

From: In a large 8 quart pot place all but last 3 ingredients (these are for garnish), and bring to a boil. Reduce to simmer and cook 1 hour. Remove from heat and let cool in pot. This is very important for infusing flavors. Puree and strain through fine sieve. Add scraped vanilla beans, mix. Refrigerate and serve ice cold. Garnish with grapes and bananas.
