Chilli Mussels

It will save you a trip to Pizza Bellaroma in Fremantle. Make sure you have some great bread to soak up the juices.


1 kilogram Mussels
3 tablespoon olive oil
1 Onion; chopped
2 cloves Garlic; crushed
2 Red chillies; chopped
2 400-g tins Tomatoes; tinned
2 tablespoon Tomato paste
1/2 cup White wine
salt and pepper; to taste
2 tablespoon Parsley; chopped

Original recipe makes 4



Heat oil and saute onion.

Reduce heat and add garlic and chilli. Cook for 1 minute.

Stir in tomatoes, tomato paste and wine.

Season and simmer, covered, for 10 minutes.

Wash andscrub mussels, discarding any which are open.

Add mussels to pan and cook covered for 5 minues, or until mussels begin to open.

Garnsih with parsely and serve with fresh crusty bread.

Great recipe! Added a few extra Thai chillies for a little extra zing. But that's personal preference.

It is the best! So simple and taste fantastic! I missed out on the tomatoe paste, but dice tomatoes are super tasty with it already! After the mussels I drank up all the soup with plenty of bread! Be careful with the chillis though, the chilli seems to release more spice in soup.
