Suggest a better description1. Brown pork belly on both sides.
2. While belly is searing, place remaining ingredients, except chicken stock in 100-pan.
3. Top with pork belly, then add enough chicken stock to come 1/2 way up the sides of the pork. Place over high heat until liquid is simmering.
4. Top with parchment paper, then seal with aluminum foil.
5. Braise in a 275 degree oven for 4 hours, or until completely tender.
6. Transfer to a fresh insert and strain cooking liquid over top. Weigh down to compress meat and chill overnight.
