Home made chocolate ice cream with a dash of mint
In a medium sauce pan combine 250 ml cream with the handfull mint leaves, heat the mixture until its hot and steamy. Remove from heat, cover it and let it stand for 45 minutes to infuse with cream. Wip the remaining cream to soft peak. In another medium sauce pan melt the chocolate. Beat the confectioners sugar + cacao + egg yolk to a ribbon stage. Pour the mint and cream mixture through a strainer into the melted chocolate and press down on the mint leaves ... Mix well, add this mixture and the condesed milk to the egg yolk mixture ... Mix well. Fold the cream into this mixture and place the final mix in the freezer for 24 hours. ENJOY !!!
