A quick and easy biscotti to make using a cake mix. It makes a wonderful gift and disappears fast!!
Preheat oven to 350. Line 2 baking sheets with parchment paper. Combine cake mix, flour, butter, eggs and almond extract in a large bowl. Beat with a mixer on low speed until well blended; stir in nuts. Divide dough in half. Shape each half into a 12x2 inch log; place logs on prepared baking sheets. Bake 30-35 minutes, or until a toothpick inserted in center comes out clean. Remove logs from oven; cool on baking sheets for 15 minutes. Using a serrated knife, cut logs into 1/2 inch slices. Bake biscotti 10 minutes. Remove to cooling racks; cool completely. Drizzle melted chocolate over biscotti and allow chocolate to set before storing in an airtight container.
