These are nutrient dense unbaked chocolate bars. They have a low glycemic index and glycemic load, especially when made with Agave.
½ cup honey or agave
1/3 cup coconut oil
¼ cup raw cacao or cocoa
1 teaspoon vanilla
¼ teaspoon sea salt
1 cup sliced almonds
1/3 cup pumpkin seeds
1/3 cup sunflower seeds
¼ cup ground flax seeds
(If desired, you can add gf crispy rice, dried cranberries, etc.…..)
Grease an 8x8 dish.
In medium saucepan add oil, honey and cocoa.
Bring to a boil, stirring frequently. Allow sauce to boil for one minute.
Remove from heat. Add all remaining ingredients. Mix well.
Pour into dish. Press down and smooth top. Allow to cool on counter and then place in fridge to harden.
Cut into squares and store in a closed container in fridge or freezer.
