Preheat oven to 275 degrees
Cream together softened butter, sugar and salt in a large bowl
Stir in flour
For chocolate cookies, melt 1/2 cup of chocolate chips and add to dough
Add remaining chocolate chips to either plain or chocolate dough
On a lightly floured surface, use a rolling pin to roll the dough out to about 1/4 inch thickness
Using cookie cutters, cut the dough into desired shapes and place on cookie sheet
Bake for about 20-25 minutes.
Decorate with icing if desired, or can be eaten just as they are!
