A delicious soft cookie bar with the perfect amount of coconut crisp. Top with cream cheese, peanut butter or jam, as desired!
Preheat oven to 350°F
Lightly grease a 9 inch pie pan or an 8×8" baking pan.
In a large bowl combine agave and melted coconut oil and mix on low with a hand blender. Add the egg and vanilla and beat again until well combined.
In a smaller bowl combine the flour, baking soda, cocoa and salt until well mixed then add to the egg mixture. Mix until just blended and add the chocolate chips and coconut.
Scoop batter into baking pan. Smooth it out with lightly oiled spatula or hand evenly into the pan and bake for 20-25 minutes. Cool slightly and enjoy.
