Fluffy and creamy cake.
Cake
* Preheat oven to 180?C.
* Place the eggs and sugar on the mixer and whip for 10 minutes or until they have tripled in volume.
* While mixing, sift the flour with the cocoa three or four times to make it light and fluffy.
* Melt butter.
* Add sifted flour to the egg mix in two times, carefully and slowly to prevent the whipped air from escaping.
* Add the melted butter and mix gently.
* Pour in 21cm mold and bake for 25 minutes. Allow to cool for few minutes and unmold and let cool down completely.
* Cut cake horizontally to get two decks.
Filling
* Melt chocolate and allow to cool down a bit.
* Add 100ml of cream to the chocolate and mix well.
* Whip the rest of the cream with sugar.
* Add chocolate to the whipped cream and carefully mix.
* Add the almonds, mix and place on the base cake.
* Place in fridge to set teh cream.
Frosting
* Melt chocolate and allow to cool down a bit.
* Add 130ml of cream to the chocolate and mix well.
* Whip the rest of the cream with sugar.
* Add chocolate to the whipped cream and carefully mix. Allow to set for a few minutes.
* Cut the banana in slices and place over the cream base cake.
* Place top of cake and decorate with the chocolate frosting.
