Delicious Chorico sausage baked with new red potatoes
Preheat oven to 350?
Wash the potatoes under cold water and quarter them, set aside to dry on paper towels. Cut the chorizo on the bias into bite size pieces and set aside. Clean the bell pepper of seed and pith and slice into strips about ? inch and set aside. Slice the red onion the same as the pepper and seperate. Place the red potatoes on the foil then followed with the red peppers, onion and chorizo. Drizzle the olive oil over all of it and sprinkle with Kosher salt, pepper and minced thyme. Place the rosemary on top and wrap the whole mix with the foil. Place on baking sheet and cook for 45 - 60 min. Test the potatoes with a fork after 45 min. when they are done serve and enjoy.
