Attempt at steamed mussels from the Root Restaurant circa 2013/2014
Brown sausage and set aside. Heat large pan (wok) on high heat. Throw in the mussels and sprinkle oil. Cover and shake hard over high heat until mussels pop. Add onion, garlic and toss until just starting to brown. Add beer and salt. Reduce heat to medium. Add fennel, sausage, tomatoes, and jalapenos. Continue steaming uncovered for 6-8 or until sauce reduces by 50%. Turn off heat and add whipping cream and cilantro. Serve with toasted baguette.
