Ready in 30 minutes
Great summertime dish - easy and fast for company. Lime and cilantro marinated chicken layered with avocado salsa.
1. To prepare chicken, combine first 4 ingredients in a large bowl; toss and let stand 3 minutes. (longer time = more flavor). Remove chicken from marinade; discard marinade. Springle chicken evenly with 1/4 teaspoon salt. Heat a grill pan over medium-high heat. Coat pan with cooking spray. Add chicken to pan; cook 6 minutes on each side or until done.
2. To prepare salsa, combine tomato and all ingredients except for avocado in a medium bowl. Add chopped avocado with care trying not to mush. Serve salsa over chicken.

cindylong 2y agoMarinated the chicken for an hour, added cumin. sautéed onion and red bell peppers in olive oil then added the chicken. (no salt, we are on a 2 gram sodium diet) Was so good. This is one of the best dinners with no salt. Didn't make the salsa.

Youngsd 3y agoI marinaded the chicken 10 minutes and other than that followed the recipe to the letter. It was easy to make and full of flavor. I will definitely make this again.

Aolingh 5y agoIt was easy to make, but the chicken didn't have as much flavor as I expected. Used the leftovers to make a salad with mango and a vinaigrette.
