Suggest a better descriptionProof yeast by mixing 1 tsp of sugar, 1/4 cup 105 degree water and yeast. Mix well and proof until foamy.
Heat the milk in a small saucepan until it bubbles, then remove from heat. Mix in butter; stir until melted. Let cool until lukewarm.
In mixer bowl, combine flour, sugar and salt; mix well. Add proofed yeast, egg and the milk mixture; Mix with spoon or dough whisk until a ball forms . Place bowl in mixer with dough hook on medium speed. If dough is slack add flour a teaspoon at time. until dough has pulled together and still slightly sticking to bottom of bowl when kneading, Knead for 5 minutes and turn it out onto a lightly floured board. Knead dough slightly and form ball. Cover the dough ball with a damp cloth and let rest for 10 minutes.
While dough is resting make the cinnamon spread. in a small bowl, mix together brown sugar, cinnamon, and softened butter to a uniform paste.
After dough has rested roll out dough into a 1/2" thick x 9" x 12" rectangle . Using the side of the bench knife and pulling on the corners, push in on the edge of dough to form a perfect rectangle. Spoon the cinnamon spread over the dough and spread evenly from edge to edge on 3 sides leaving a 1/2" space on the long side of one edge exposed . If using raisins are chopped pecans sprinkle over mixture.
Roll dough starting from long side and roll to the 1/2" exposed edge and pinch seam to seal. Make sure you pinch seam of dough together well. if not the seam will break loose and uncoil while baking. After pinching, roll seam side down. Measure log to make sure the log is 12" long. If the log stretched when rolling , using the side of the bench knife push in on each end until the log is 12" . long,
Next using a serrated knife, gently in a sawing motion cut into 8 - 1 1/2" rolls and place cut side up in lightly greased 9" x 13" glass casserole dish with 2" sides so when rolls rise the sides of the rolls will touch pushing upwards. ( see photo above) Do not use a metal pan because it will over cook the rolls. DO not use a sheet pan because the rolls will flatten and not rise up and the whole roll will be exposed to heat making for a harder roll.
After placing in pan cover and let the rolls rise until doubled, about 30 minutes. (note: The rolls will rise slightly but doubled. At this rise they will not be touching each other, but during baking they will spring and fill the pan. Preheat oven to 350 degrees F..
Note:
( For Dough to rise the temperature needs to be at least 85 degrees. if the temp is lower than 85 degrees it will take longer for it to rise. There are several methods for rising the dough. You can place the covered pan in a non airconditioned room ( Garage), on a heating blanket or place the uncovered pan in the non heated oven or a Cambro with 1 1/2 cup of boiling water, )
While dough is rising mix the icing. Mix all ingredients until fully combined and place in refrigerator until rolls are finish baking.
Bake for 20 minutes, or until browned. Rotate pan at 10 minutes for even cook. The rolls will be Slightly undercooked. Remove from oven. Let roll rolls cool about 2 minutes and then Ice immediately and Serve warm. Rolls taste better hot. If cool you can reheat them by microwaving for 30 seconds.
