"I used the tip to lessen the grated orange peel and it came out delicious! An easy and tasty recipe!"

Ingredients

1 lb Halibut; 3/4 inch thick
1/3 cup onions; finely chopped
1 clove Garlic
1 tbsp Butter
2 tbsp Fresh Parsley
1/2 tsp Orange peel; finely shredded
1/4 tsp Salt
1/8 tsp Black pepper
1/4 cup Orange juice
1 tbsp Lemon juice

Original recipe makes 4

Servings

Preparation

Thaw fish if frozen. Rinse fish and pat dry with paper towels. Cut fish into 4 serving-size pieces, if necessary. Arrange in a 2 quart square baking dish.

In a small saucepan cook onion and garlic in hot butter over medium heat until tender; remove from heat. Stir in parsley, orange peel, salt and pepper; spoon over fish. Drizzle orange and lemon juice over fish. Bake, covered in a 400 degree F oven for 15 to 20 minutes or until fish flakes easily with a fork. Spoon pan juices over fish.

Notes

Nicely flavoured fish. I didn''t measure the amout of orange peel and got a little to much for my wife. Gave it a slightly bitter taste. I will make it again and next time cut back on the orange peel a little.

Two thumbs up! We cut the recipe in half for the two of us and both loved it.
