A nice and easy clam dinner with a flavorful broth
Heat the olive oil in a large pot over medium heat. Add the andoullie and onion, add garlic after about 3-5 minutes. Cook for 2 or 3 minutes, then pour in 3/4 of beer. Let simmer for a few more minutes, then add the clam juice, tomatoes, and rinsed clams.
Cover, and simmer until all clams have opened. Season with oregano, salt and pepper before serving.
Mix clams with muscles or clams only. This creates a lot of broth so add as many clams as desired. Broth is great for dipping bread.
