In large bowl, stir soup and milk until smooth; fold in chicken, vegetables and thyme. Pour mixture into baking dish. Roll out pastry on floured surface to about 14x10. Cut out center with desired cookie cutter. Place pastry on top of chicken mixture; seal to dish.
Crimp pastry edge, brush with beaten egg. Bake at 425 degrees for 15 minutes; reduce heat to 350 degrees and bake 30 minutes more. (Bake pastry "cookie" cut-out on baking sheet until golden brown and place on top of casserole before serving).
