Ingredients

1 cup Real Mayonnaise
2 tablespoons Vinegar
1 1/2 teaspoons Salt
1 teaspoon Sugar
1/4 teaspoon Pepper
4 cups Potatoes; cooked
1 cup Celery; or Carrots
1/2 cup Onions; chopped
2 Eggs; Hard-cooked, chopped
1 large Tomato
2 medium Green onions

Original recipe makes 6

Servings  

Preparation

Combine mayonnaise, vinegar, salt, sugar and pepper. Stir in remaining ingredients (If using carrots boil them lightly for 2-5 minutes). Garnish with freshly chopped tomatoes and green onions.Cover; chill.

Makes 5 cups.

Very nice. Did not add any carrot, but used extra celery and halved the mayo. Also added chopped garlic chives. One for my favourite list.

This was a good combination to make potato salad. Some of the things I did differently since I was low on ingredients is add yellow mustard to the mix as well as using celery seed with the chopped carrots.

1/4 cup to 1/2 a cup of mayonnaise tasted much much better...my advice is to add a bit of mayo at a time and stop when you've reached acquired taste.

This was a really nice version of Potato Salad. I used a cup of carrots instead of celery simply because I prefer them and next time I make this recipe I will use a little less mayo.
