Very easy classic sponge cake with strawberries filling
1. Preheat oven to 180 degree. Line bases of tins with baking paper.
2. Place egg whites in a large clean, dry bowl and use electric beaters to beat until peak form.
3. Add sugar gradually, beating constantly until sugar is dissolved and mixture is thick and glossy.
4. Add the egg yolks, beat for another 20 seconds.
5. Fold in flour quickly and lightly with a metal spoon.
6. Spread mixture evenly in prepared tins. Bake for 20 mins. Leave the sponges to cool down in oven for 15 mins before turning onto wire racks.
7. Cut the sponge in half and brush both sides with strawberry jam. .Place the strawberries on top and then top with second sponge.
8. Dust with sifted icing sugar before serving.
