Cobb Salad

Works great with tomato soup


3 breasts boneless chicken breasts
5 Eggs; hard-boiled
1 lb bacon; chopped
1 - 2 Avocados; diced
1 cucumber; diced
1 cup carrots; shredded
2 Tomatoes; diced
2 Bell pepper; chopped
1 head iceberg lettuce; chopped
2 heads green leaf lettuce; chopped
Blue cheese dressing
3/4 cup buttermilk
1/2 cup low fat mayonnaise
1/4 cup Shallots minced
2 tblsp Chives
1 tblsp Fresh lemon juice
1/2 tsp Course Salt
1/2 tsp celery salt
1/2 cup crumbled blue cheese; Boars head from Harmons
1 packet hidden ranch buttermilk recipe

Original recipe makes 10 Servings



Chop lettuce in a large flat bowl. Carefully lay toppings over the top in pretty patterns.

Optional toppings: roasted sunflower seeds, celery, croutons, blue cheese.

Dressing: Whisk together buttermilk, mayo, and spices. Fold in blue cheese and make sure to refrigerate it for at least 30 minutes. Will keep in the fridge for 3 weeks.
