Great way to use extra banana's and easy
Preheat oven to 350 .
Combine flour,soda,and salt in meduim bowl. Mix and set aside.
Place sugar and butter in mixing bowl.;mix for about a minute. Gradually add eggs one at a time..
Add banana's,rum, and vanilla. Beat until blended. Add flour mixture, beat at low speed until moist. Stir in 1/2 cup coconut and pecans
Coat 9 x 5 loaf pan with cooking spray .Pour batter into pan and sprinkle 1 tbsp coconut on top.
Bake at 350 degrees for 1 hour. Check with tester. Usually takes 1:10 to 1:15 minutes.
Cool on wire rack for 10 minutes. Remove from pan..
Mix Powdered sugar and juice and drizzle over slightly warm bread.
Continue to cool wire rack
