Delicious and has a wonderful fragrance while cooking!
Allow two dishes. Beat the egg with a splash of water in first dish. Combine the panko breadcrumbs and coconut in the 2nd dish. Heat a thin layer of extra virgin olive oil (eyeball it) in a large skillet over medium heat. Season the chicken cutlets with salt and pepper, then the egg and lastly, the breadcrumb-coconut mixture. Fry the cutlets in two batches until deep golden in color, 3-4 minutes on each side. Keep the chicken crisp in the warm oven and repeat with the remaining chicken. In a small skillet over medium-low heat, stir together the pineapple preserves, rice wine vinegar, soy sauce and chicken stock. Reduce until thickened, about 2 minutes. Stir in the scallions.To serve, arrange the chicken on plates, top with sauce or serve the sauce on the side. Close your eyes, take a deep breath of the wonderful fragrances and dream you're in Hawaii, then eat and enjoy!
I served this with Basmati rice (90 seconds in the microwave by Uncle Ben) flavored with a half palm of chopped cilantro or parsley and a dash of lime juice and salt and pepper to taste. I also served a salad with fresh greens, 1/2 cubed avocado, 1/2 cubed tomato and topped with vinaigrette. I used Good Season's vinaigrette dressing.
It's easier than it sounds and you can make the rice and salad while the chicken is cooking. Be sure to keep the pan heat low-medium as this will burn easily.
