Indian fare very yummy for any occasion. Better than butter chicken! This is my secret recipe which isn't so secret anymore! Enjoy!! Please rate and comment.
Cut up chicken breast and cook in frying pan until cooked through. Set aside.
Cook in frying pan for 5 - 6 mins (sesame oil, Ginger and garlic)
Add curry paste and tomato paste (cook aprox. 5 min. until it is a nice rust color)
Add soy sauce and cumin.
Add Coconut milk, and chicken. (Simmer for 20 minutes)
Adjust taste with salt and pepper.
Serve over rice.
Enjoy!
Make sure to use curry PASTE not powder.
