Healthy gluten free pacakes
These pancakes need to be cooked on a very low heat.
Make sure you don’t mix your pancake batter too thoroughly as an overly mixed batter can often result in flatter pancakes, so don't worry about leaving lumps in the mixture.
Firstly mix the wet ingredients together. Measure out the milk in a jug and then add the eggs, oil and vanilla extract.
Then mix the dry ingredients. In a separate jug or bowl put the coconut flour, baking soda, bran, sugar and salt. Break up any lumps with the back of a spoon.
Then mix the wet ingredients with the dry ingredients and stir lightly just to combine. There will still be lumps but that is fine as they will disappear when the pancakes are cooking. The mixture will thicken a bit as it sits due to the bran but this will not affect the taste or texture of the cooked pancakes.
To cook, add a few tablespoons of coconut oil to a frying pan. Pour the batter into the pan to make little pancakes. I use those fried egg silicone rings so the pancakes don't spread out to much. Cook on the lowest heat for about 3-4 minutes and then turn. Do 4 pancakes and then add more oil and do another 4. This recipe should yield around 8 or so pancakes.
You won't see bubbles forming on the top of the pancakes so check the bottoms to see if they are cooked. Gently cook until the pancakes are nicely browned on both sides.
Serve with maple syrup, a dollop of quark or yoghurt and sliced bananas, blueberries or other seasonal fruit.
