Heat the olive oil over medium heat.
Sauté onions until softened, about 5 minutes.
Add garlic and ginger for an additional 30 seconds.
Add spinach and sauté until it begins to wilt.
Add the coconut milk and lime juice.
Turn the heat down to low.
Let heat 10 minutes.
Meanwhile, salt and pepper the salmon fillets.
Add to the coconut milk.
Cook for 5-7 minutes, then flip.
Cook an additional 3-5 minutes.
It should be slightly opaque in the middle.
Garnish with toasted coconut.
