Cold Lentil Salad

Try this Cold Lentil Salad recipe, or contribute your own.


2 tb Parsley; chopped
2 Tomatoes; chopped or canned
1 c lentils; Any type of
2 ts Dijon mustard
2 green onions; chopped, (up to 3)
2 tb Olive oil; (optional)
1 tb Wive vinegar

Original recipe makes 2



Cook lentils in water for 30 to 45 minutes (no salt) Drain. Blend in other things except for tomatoes, parsley and green onions. Chill. Add rest of the stuff. Serve cold with or without har.boi.eggs.
