1 tb Apple juice concentrate
1 tb Grainy-style of honey
1 Large carrot, shredded
Their skin
1 ts Honey
2 tb Apple cider vinegar
1/4 ts Salt
4 c Shredded green and red
1/4 ts Freshly cracked black pepper
3 tb Nonfat plain yogurt
2 Green apples, shredded with

Original recipe makes 6 Servings



Shred the cabbage, carrot, and apples in a food processor or with a hand grater over a large bowl. Whisk together the remaining ingredients. When well blended, pour over the cabbage mixture. I used only green cabbage and substituted mayo for the yogurt as I didn't have any. I dressed the salad lightly and served over pulled pork sandwiches. It was even enjoyed by my friend who typically does like cole slaw.

I used this recipe as a guide as I didn't have all the ingredients. I used cabbage, apple and carrot with the sauce made of yogurt, apple cider vinegar, dijon mustard, agave nectar and salt & pepper. It was excellent!
