potato pancakes are a wonderful comfort food! Try with melted chedder on top. Serve with apple sauce or sour cream.
Peel, shred, and drain potatoes. Add 2 packages of matzoh ball mix and stir. scramble up 6 eggs in a bowl and mix into potato mixture add salt and pepper and spoon into a hot frying pan with enough vegetable oil to coat pan. let cook about 5 minutes a side on medium heat. or adjust as needed for your stove.
