This is a great WW CORE recipe. Tasty and filling for a soup! Comes from the WW Turnaround cookbook.


Ingredients

1 pound beef top round; cut into 1" cubes, all fat removed
3/4 cup pearl barley
2 14.5 ounce cans Beef broth
3 cups Water
3 each carrot; chopped
2 each Onion; chopped
3 stalks celery; chopped
1 1/2 teaspoons Salt
1/4 teaspoon Pepper
1 1/2 cups butter beans
1 1/2 cups fresh mushroom; sliced
2 teaspoons garlic; minced, for braising meat
1 tablespoon Garlic; minced

Preparation

Crock pot method: Spray pot with non-stick cooking oil. In sauce pan, spray with cooking spray and add 2 teaspoons of minced garlic; braise the top round just to coat. Combine all ingredients in crockpot and cook on high for 1 hour and set to low for 7 hours..
