This one-pot hearty meal can easily be altered to meet your family's tastes. Try subbing ground turkey breast for the beef and whole-wheat spirals or wagon wheels for the elbow macaroni.


12 ounces 93/7 Ground Beef; (with 7% fat)
1 medium onion; chopped
14 1/2 ounces canned stewed tomatoes; Mexican-style, undrained
1 1/4 cup Tomato sauce
2 tablespoons Canned green chiles; diced, drained
2 teaspoons Chili powder
1 teaspoon Ground cumin
1 cup Pasta, Whole Wheat; uncooked
15 ounces kidney beans; drained and rinsed
1/2 cup Parmesan

Original recipe makes 6 Servings



In a large skillet, cook beef and onion until meat is browned, about 10 minutes; drain off fat. Stir in undrained stewed tomatoes, tomato sauce, chili peppers, chili powder and cumin; bring to a boil.

Stir in uncooked macaroni and kidney beans. Return to a boil, reduce heat, cover and simmer until macaroni is tender, about 15 minutes.

To serve, spoon into bowls and sprinkle with grated Parmesan. Yields about 1 1/4 cups of chili and 1 1/3 tablespoons of topping per serving.

Had to add water and cook about 15 minutes longer- use all the green chilis, 2 small cans tomato sauce, and 1 lb ground beef- added some hot sauce for us- easy, base recipe!!! Thanks for posting!

This was really good. I made it for my hamburger helper loving husband and he and our 3 kids ate ALOT of it. They all liked it. I used 1 lb. Ground beef, whole can of tomato sauce and 1 small can of the Chiles over 8 oz. Of pasta and a little garlic. I think that I would add more garlic next time and maybe some coriander.

Great recipe, easy to make, and easy to adjust recipe to your liking. I was out of cumin, so I used a packet of Sazon Goya instead and it was great!

I just started on Weight Watchers yesterday and found this recipe on Big Oven so I thought I would give it a try. I thought it was a good recipe but I would alter it to your own specific taste as the recipe author suggested. I ended up using soy protein crumbles instead of ground beef beacause I had some on hand and wanted to use it up. I also increased the green chiles to 3 tablespoons but other than that I left it alone. I will make this again when I have a little time to play around with the recipe but I thank gbolton for a solid core recipe that is easy and quick to make.
