This one-pot hearty meal can easily be altered to meet your family's tastes. Try subbing ground turkey breast for the beef and whole-wheat spirals or wagon wheels for the elbow macaroni.

In a large skillet, cook beef and onion until meat is browned, about 10 minutes; drain off fat. Stir in undrained stewed tomatoes, tomato sauce, chili peppers, chili powder and cumin; bring to a boil.
Stir in uncooked macaroni and kidney beans. Return to a boil, reduce heat, cover and simmer until macaroni is tender, about 15 minutes.
To serve, spoon into bowls and sprinkle with grated topping. Yields about 1 1/4 cups of chili and 1 1/3 tablespoons of topping per serving.

Czwhiz 6 days 5 hours agoHad to add water and cook about 15 minutes longer- use all the green chilis, 2 small cans tomato sauce, and 1 lb ground beef- added some hot sauce for us- easy, base recipe!!! Thanks for posting!

Carsenis 4 years agoGreat recipe, easy to make, and easy to adjust recipe to your liking. I was out of cumin, so I used a packet of Sazon Goya instead and it was great!

wineguy818 5 years agoI just started on Weight Watchers yesterday and found this recipe on Big Oven so I thought I would give it a try. I thought it was a good recipe but I would alter it to your own specific taste as the recipe author suggested. I ended up using soy protein crumbles instead of ground beef beacause I had some on hand and wanted to use it up. I also increased the green chiles to 3 tablespoons but other than that I left it alone. I will make this again when I have a little time to play around with the recipe but I thank gbolton for a solid core recipe that is easy and quick to make.
