This is a recipe that my family and have been making for quite sometime now and believe it or not it's off of a pasta box! This dish puts a new spin on pasta and salad alike, but is still light enough to be eaten as lunch and heavy enough for dinner. It also takes about a half an hour to cook, so it's great for those busy weeknights with the kids going here and there or just a quick lunch and there will be plenty of leftovers for later!
Cook the pasta according to package directions.
Rinse pasta w/ cold water and drain.
Place the cooled pasta in a large bowl.
Stir together tomatoes, green onions, chicken, and pasta; add dressing and mix thoroughly.
Top with croutons and parmesan cheese.
Chill and serve.
It comes out best when either chicken is either pan-seared or baked. If you bake the chicken, season it to taste and coat with Italian dressing to add flavor. Serve with your choice of bread.
