A simple tasty companion to nacho casserole or spicy chili.


1 1/4 cup complete buttermilk pancake mix
3/4 cup cornmeal; yellow
1/4 cup oil; (smart balance)
1/4 cup honey
3/4 cup water
1 tsp baking powder
1 tbsp honey
1 tbsp butter; (smart balance) melted

Original recipe makes 11



Mix the mix, cornmeal, oil, 1/4 C. honey, water and baking powder, just until combined. Spoon into muffin cup lined pan or a lightly greased silicone muffin cup pan. Bake in a preheated oven 325 for 15 to 20 minutes, mix the melted butter and honey and brush over the muffins and return to the oven for 4 minutes, remove from the pan and liners and eat. Cool if any are left and store in a airtight container.
