Nice savory waffle that can go for any meal. Great for breakfast with a touch of Maple Syrup, or for lunch or dinner with the sauce of your choice.
Condition and preheat waffle maker.
Use spoon to stir together corn muffin mix, cayenne, eggs, vegetable oil, and milk together.
Stir in corn, chilies, and cheese.
Pour approximately 3/4 to 1 cup of batter into waffle maker. Close lid and bake waffle. High setting will produce a crispier waffle.
When done, the top plate should pull free easily. Lift the top gently; if it pulls, continue cooking for another minute and test again.
Remove waffle and repeat.
Higher waffle iron temps seem to work better for this recipe.
This basic recipe came from the instruction book from a new waffle iron. I normally would have paid it no attention, but it was so different I had to try it. My wife, the non-adventuresome one, loved it! It is a regular now!
