Crispy Baby Artichokes with three dipping sauces
Cut and trim baby artichoke removing the tough outer leaves, the top, and part of the stem.
Quarter and place in lemon water. Blanch for 1 minute and shock in ice water. Completely dry artichokes.
Mix Wondra, salt, pepper and parsley. Heat a pan of olive oil two inches deep. Toss artichokes in Wondra mixture and fry in olive oil till crispy for about 4 minutes. Drain on paper
Serve with lemon, Parmesan and three dipping sauces

Honey bourbon mustard sauce
Sage creme fraiche
