Quick and easy way to do cornish game hen.
Preheat a panini press or Griddler, etc.
Spatchcock the hen: Using kitchen shears, carefully cut out the backbone of the hen. Go up one side, then carefully repeat on the other and remove.
Butterfly the game head and season the way you like (poultry seasoning or just salt and pepper) primarily on the non-skin side.
Lightly spray press top and botton with non-stick spray (important for color/crunch).
Place hen, skin side up, onto press and close lid. Press hard to start flattening process. Place weight on top nof press (I use a couple of stacked iron skillets).
Cook 12 minutes.
Remove and serve with favorite sides. Quick, crispy, delicious!
