These delicious crescents can be baked with the filling of your choice: vanilla, nuts, chopped dried fruit, chocolate.
Place water in large warm bowl.Sprinkle yeast and let dissolve.Add milk, butter, salt, sugar and 1 1/2 cups flour.Blend well. Stir in 2 eggs and enough flour to make a stiff batter. Cover with plastic wrap. Refrigerate at least 2 hours or up to 2 days.
Prepare the filling.
For the cottage cheese filling you will need 2 cups cottage cheese, 1 cup sugar, vanilla, rum essence (optional), pinch of salt, raisins,lemon rind, 1 beaten egg.Mix well.Refrigerate if needed, the mixture has to be stiff.
Remove dough from refrigerator to lightly floured surface; divide in half. Roll each half to 15-inch circle. Cut each circle into 6 wedges.Place 1 tablespoon filling at wide end of each edge.Starting at wide wend begin rolling to enclose filling. Place with points down on buttered baking sheet.Curvwe ends to make a crescent.Cover and let rise in warm place for 45 minutes. Lightly beat the remainin egg and brush on crescents.Bake at 375 degrees Farenheit for 15 minutes or until done. Let cool on wire rack.
