A perennial favorite on our Thanksgiving dinner table
Make day before:
1. Preheat oven to 375 degrees.
2. If using dried cherries, reconstitute them by placing the cherries in a bowl; cover with boiling water. Let stand for 15 minutes, drain.
3. Cut bottom crust and ends off the bread and discard. Cut bread with crust into 1-inch cubes and place in large bowl. Add oil, thyme and garlic; toss.
4. Spread out on large rimmed baking sheet. Sprinkle with pepper and salt. Bake until golden and slightly crunchy, stirring often, about 20 minutes. Return to same large bowl. Cover and store at room temperature.
5. Melt butter in large skillet over medium-high heat. Add onions, celery, ham, and pepper. Saute until vegetables are soft, about 10 minutes.
6. Mix in parsley and cherries. Cover and store chilled.
On day of meal:
1. Preheat oven to 375 degrees. Butter 11x7x2 baking disk.
2. Stir vegetables and almonds into bread cubes. Add hot broth, tossing to coat.
3. Mix in cheese. Transfer to dish.
4. Cover with foil and bake until heated through, about 25 minutes.
5. Remove foil and bake until top is brown, about 25 minutes longer.
