Great for Brunch!
Cook sausage in large pan, crumbling as it cooks. Drain and set aside.
Bring water and salt to a boil. Stir in grits. Return to a boil and reduce heat. Cook 4 minutes, stirring occasionally.
Combine grits and cheese in large mixing bowl. Stir until cheese is melted.
Combine eggs, milk, thyme and garlic salt; Mix well. Add a small amount of the hot grits mixture to temper.
Stir egg mixture into grits mixture. Add sausage, stirring well. Pour into a 12x8x2 baking dish. Cover and refrigerate overnight.
Remove from refrigerator. Let stand 15 minutes. Bake @ 350 for 50 to 55 minutes,
Garnish with tomato roses and parsley sprigs.
NOTE: Recipe may be halved. Bake @350 in a 10x6x2 baking dish for 45 minutes.
