Suggest a better description* Heat oil and butter in large sauce pan over medium heat
* Add shallots and cook over medium-low heat, stir occasionly
* Add chicken stock and bring to a boil
* Stir in cous cous, I teaspoon of salt, pepper, and put lid on. Turn off heat and let sit for 10 minutes
* Cook peas in microwave, toast pine nuts in sauce pan
* When done, fluff cous cous and stir in peas, mint and pine nuts.
* Season to taste
