Suggest a better descriptionMelt butter in a pan. Finely chop shallots and add to the melted butter, and cook until translucent. Add the chicken stock, Salt and pepper, and bring to a boil. Take off of the heat, and add the couscous. Stir and cover the pot. Toast the pinenuts in a frying pan (watch them carefully because they can burn very quickly) and chop the flat leaf parsley into a rough chop. After the couscous has been in the covered pot for 7 minutes, remove the cover and fluff with a fork. Add the parsley and the pinenuts and fluff again.
