Couscous with Golden Raisins and Cinnamon

Delicious accompaniment to grilled recipes, particularly seafood and chicken.


2 tablespoon Butter
1 10-oz package Couscous; I prefer Near East brand
2 cups Chicken broth
1 whole Spring onion; chopped
1/2 cup Golden raisins; fresh and plump
1 whole Cinnamon; stick
2 tablespoon Fresh parsley; chopped

Original recipe makes 5 Servings



Bring chicken broth to a boil in a coverable saucepan.

Add couscous, butter and cinnamon stick. Stir. Immediately turn off heat and cover tightly. Let stand for 5 minutes. Remove cover and stir in raisins and spring onion. Add parsley, add more butter and salt and pepper as desired; serve immediately.

NOTE: Couscous cools rapidly, due to the large surface area. Prepare this dish only at the last minute -- takes only 10 minutes maximum, start to finish. Or, pre-warm a serving dish.
