awesome muffins for a breakfast meeting (food service measures. use big oven to scale down!)
1. Blend flour, sugar, salt, shortening/margarine togehter until crumb-like in texture. (Remove 1 QT per pan reserve for topping.)
2. To the remainign mixture, add all other ingredients and mix until the batter is smooth. Divide batter and place in greased #4455 (long sheet pan) baking pan.
3. sprinkle reserved 1 QT topping evenly over pan of batter
4. Bake at 375F in convection oven for about 25 minutes.
