Crabby Susan

Ready in 20 minutes

Our local supermarket puts Alaska king crab legs on special every once in a while. I developed this recipe while trying to figure out a way to use a relatively small amount of a relatively expensive ingredient.

6 ounces Rotini; (about 2 cups)
1/2 tablespoon Butter
1 clove Garlic; crushed
1/2 cup Green onion; chopped
1 cup Mushrooms; sliced
1 cup Crab; chopped
2 tablespoons Sherry
2 tablespoons Light (5%) cream

Original recipe makes 3

Cook rotini according to package directions. Melt butter over medium heat and add garlic, onion and mushrooms. Saute until mushrooms start to soften. Add crab and sherry and continue to saute until crab is cooked, 3 or 4 minutes. Add cream and heat through. Drain pasta and add to sauce. Serve with grated fresh parmesan. If the dish seems a bit dry, drizzle a little olive oil over it.

Used imitation crab. Tasted great. Good cold or hot. With a drizzle of olive oil - heavenly.

This dish definitely didn't leave me "crabby". I loved it!. I used low-carb pasta and it came out just fine.
