4 cups chicken; cooked, cubed
1 cups walnuts; chopped
1 cups celery; diced
2+ tablespoons shallot; finely chopped
1 cups dried cranberries
2/3 cups mayonnaise
3 tablespoons tarragon/champagne/white wine vinegar
2 tablespoons fresh tarragon
1/2 teaspoons salt
1/2 teaspoons pepper (of choice)

Original recipe makes 8 Servings



mix all ingredients in large bowl;

add more cranberries, nuts, shallot, tarragon to taste;

add more tarragon if using dried herbs instead of fresh;

chill and serve;

As previously suggested I halved the quantities and still had a generous bowlful.Very tasty on a sandwich and super simple to make.Just as good as the Cape Cod style chicken salad I got from the deli in my summer vacation!

This chicken salad was outstanding. The walnuts were nice, the chicken was perfect. Makes a lot though. You can probably cut this in half and be just fine.
